De-stemmed Muscat de Hambourg & Alphonse Lavallée, then layered whole bunch perfectly ripe Grenache noir until the vat was full.
4 day short maceration, during which the table grapes released their juice and day by day immersed the whole bunches.
Pressed quickly, as soon as the tannins started appearing.
