Grenache (90%) picked at maturity, slightly tinged with Muscat de Hambourg (10% cross between Schiava and Muscat of Alexandria, also known as Black Muscat).
Clay-limestone soil with a presence of flint and shell fossils.
Slight maceration for a few days at low temperature of the two grape varieties together, destemmed to extract the fruit. The alcoholic fermentation starts. The wine is then run off without waiting for the end of the fermentation of the two grape varieties. Blending of the run-off and press juices in the press. Fermentation at low temperature (18°C). Post-fermentation racking for clarification. Aged for 4 months in stainless steel tanks before bottling
